You are invited to an exclusive weekend hosted by International Wine Communicator of the Year Tyson Stelzer, showcasing the distinguished champagne house of Pol Roger including the highly anticipated Pol Roger Cuvée Sir Winston Churchill 2008 alongside the finest Tasmanian wines, presented by their makers. Join us for Saffire’s signature degustation dining experiences, cocktail and gala dinners, lunch on the terrace and a vintage champagne and Tasmanian sparkling masterclass hosted by Tyson. Meet local winemakers, learn how to blend your own sparkling wine in our brand new interactive blending experience, explore the spectacular landscape of the Hazards of Freycinet and relax in the stunning surrounds of Saffire Freycinet.

12 noon – 2pm
Guests are welcome to arrive at their leisure for a casual sit down lunch in the restaurant.

2pm – 7pm
Spend the afternoon settling into your suite. If you prefer, Sa­ffire will have a range of activities taking place.

7pm – late
Cocktail style dinner, greeted with a glass of sparkling. While Executive Chef Iain Todd has prepared a very special cocktail style menu just for this dinner, it will be Tyson and the local winemakers who star as they share some of their special sparkling, white and red wines with you throughout the evening.


7am – 10am
A la carte breakfast at guests’ leisure.

9am – 11am
A range of Saffire activities and experiences will be launched this morning, including the iconic Freycinet Marine Oyster Farm tour and sparkling tasting, the Schouten Island sparkling and seafood cruise and a tour of Freycinet Vineyard to learn (and taste) the art of winemaking. We are also proud to introduce our first ever interactive blending masterclass, where you will discover sparkling base wine components and enjoy the opportunity to test your own skill in creating the ultimate blend. Please note that activities are limited in numbers, and will need to be booked in advance.

12noon – 2pm
Lunch is served on the terrace (weather dependent) with a BBQ, Sa­ffire style, featuring local sparkling, white and red wines.

2pm – 4pm
Masterclass. A very special chance to join an interactive session hosted by International Wine Communicator of the Year Tyson Stelzer, showcasing Pol Roger’s full suite of vintage champagnes alongside Tasmania’s flagship sparklings, culminating in the highly anticipated Pol Roger Cuvee Sir Winston Churchill 2008. And for those who prefer, there is always the spa to relax and unwind.

6:30pm – late
The ultimate degustation and immersion in the great wines of Tasmania and the world! Pre-dinner drinks hosted by Tyson and the winemakers before moving in for the gala formal dinner around 7pm. The dinner menu has been designed especially for this evening by Chef Iain. It will be a six-course menu with matching benchmark local and international wines.
