The Palate restaurant offers that ever-changing jaw-dropping view, helmed by Paddy Prenter, the Tasmanian-born Executive Chef. The restaurant starts with a sizeable advantage since the east Coast of Tasmania is rich in aquaculture and agriculture, with a bounty of oysters, mussels, crayfish, scallops, spiny lobster, and deep-sea fish. Then there’s grass-fed beef and lamb and the produce bounty from local farms. Chef Prenter creates inventive tasting menus and careful preparations that reveal the best of every ingredient, from Cape Grim eye fillet to Moreton Bay Bug, a delicious creature that’s somewhere between a crayfish and a prawn. A meal here is also a crash course in excellent Tasmanian wines, from pinot noirs from producers like Dalrymple and Tamar Ridge to sparkling wines by Arras and Clover Hill.
